New York Delicatessen style Potato Salad

Recipe for New York Delicatessen style Potato Salad

 

 

5 lbs. potatoes

  1. medium onion, grated

¼ cup Heinz white vinegar

2 Tbl. sugar

1 1/2 tsp. salt

1 ½ cups water

¼ tsp. white pepper

¼ cup vegetable oil

¾ cups Hellman’s mayonnaise (can use up to about 1 cup)

 

  1. Cook unpeeled potatoes in water until tender.
  2. Drain, peel and thinly slice potatoes into a large bowl and add grated onion.
  3. In a saucepan, combine white vinegar, sugar, salt, water and pepper and heat to boiling. Pour immediately over sliced potatoes and onions. Fold lightly to mix, cover and marinate for at least two hours in the refrigerator.
  4. Drain off marinade by placing the potato-onion mixture in a colander. Return to bowl and blend in vegetable oil and mayonnaise until creamy

    Rory, this is so beautiful. It just was so wonderful to read my dad’s stories, his words, and his potato salad!!! I cried tears of joy and laughter. From my heart to your heart Rory, you are your grandfathers grandson!
